Great bakery. Large selection of pastries and excellent quality. I assume it was Veronika who we met and she was very welcoming and personable. This bakery is on our must stop in whenever in town.
Veronika’s pastries are the best! Everything is made fresh daily with quality ingredients, & it is also very reasonably priced. We are quite lucky to have such an accomplished baker in Billings!
Let's start out with this (January 2023): James Beard Foundation Nominees: Outstanding Pastry Chef or Baker Veronika Baukema, Veronika's Pastry Shop, Billings, MT Veronika, who hails from Uzbekistan originally, learned to cook at her grandmother's knee. In most cases, this would be simple homey recipes that conjure images of Thanksgiving Turkey and the like. Veronika's grandmother must have been a chef, or a fantastically talented home baker, because Veronika's pastries are technical and delectable at the same time. As others have said: get there early. She opens at 8:00 and sells out fairly early. She doesn't have dozens of offerings. She has maybe a dozen regular items and then she has "specials" that you won't see all the time. Her store is an unassuming as can be: there's a shrine to grandmother on the wall and a tea service for decor. Other than that, you're looking at her kitchen. The delicacies are on trays in a baker's rack or in baskets on the wall. If you've bought French bakery items at Le Fourneil, Veronika's is very similar in style. Her French pastries are firm, buttery, flakey and every bit as good as the best I've every encountered anywhere. I love the Pop Tarts, Pinwheels and Berry Danish. The pastry holds firm when you bite into the filling, so the whole doesn't fall apart as you eat it. Her Lemon Tart is just amazing! It IS tart, sweet, tangy and after you share it with family, you wish you'd bought three or four of them. Today I bought a Smetannik (a Russian cake of alternating sponge and sour cream frosting layers) and a Kyiv Cake again layers but a crunchy merengue layer and nuts make this a chewy delight! I've never encountered Eastern European baking in Montana before, and it's fantastic. Arrive at Veronika's at 7:58 AM, buy an assortment, get some really good coffee, and enjoy with family or friends, because it's a shame to eat grandma's breakfast treats alone!
The smell that overtakes this small pastry shop is divine once you come through the door. Each pastry is made fresh, and that freshness come through with each flakey, buttery bite. It is well worth your time to find this little gem, especially when you need to indulge yourself.
